One of my kids favorite snacks involving vegetables is these amazing Zucchini Chips.
Often times when I make these, I have to set some aside for me before the kids eat them all… otherwise, I don’t get any! Which isn’t really a bad thing.
So if you are looking for a fun way to get your kids to eat some veggies, you’ll definitely want to try these out. They are definitely healthy enough you can justify eating a big plateful!
They are especially good with a marinara dipping sauce or pizza sauce. Maybe I’ll sit down and share my marinara sauce soon!
Zucchini Chips are super easy to make and you can determine the level of crispiness depending on how long you cook them!
- 2 zucchini sliced
- ½ cup bread crumbs
- ¼ cup Parmesan cheese
- 2 eggs
- Preheat oven to 425. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Set aside.
- Combine bread crumbs and Parmesan cheese. Set aside.
- Whisk 2 eggs together in a shallow pie plate and set aside.
- Dab the zucchini slices with a paper towel to get rid of any extra moisture. Dip the zucchini slices into the egg mixture. Then roll them into the bread crumbs and cheese.
- Place the coated chips on the prepared baking sheet. Bake for 10-12 minutes in the oven then remove from oven, flip the chips, and bake for another 10-12 minutes or until the zucchini is not soggy and the coating is crispy and golden brown. Serve immediately.
