I love the holidays! Who doesn’t love all the food and fun that come around this time of year? I especially love to enjoy all the seasonal flavors in as many ways as possible! This cranberry salsa has become one of our very favorite holiday dips!
But it also serves as a great topping for a turkey sandwich – thanks to Rhodes for making it easy to bake up delicious fresh rolls for our turkey sandwiches! Mmmm.
The last two years we’ve bought an extra turkey once they go on sale right after Thanksgiving. We cook it up and then we have leftover turkey for weeks to make all of our favorite turkey recipes. Turkey Noodle Soup, Turkey Pot Pie and of course lots of Turkey Sandwiches!
Our favorite Turkey Sandwich of the season so far is this delicious Turkey Sandwich topped with a sweet and tangy Cranberry Salsa. I love salsa because of all the super fresh and healthy ingredients and its so easy to just chop and throw into a food processor. How pretty are all those ingredients??
Surprisingly, this is one salsa that my kids can’t get enough of. They love the sweet and tart flavors that stand out! So glad this is easy to throw together and top sandwiches or dip chips and crackers.
Throw all your fresh ingredients in a food processor and blend away. You want to make sure you get it the consistency that you like for salsa. Some people like their salsa more smooth with smaller chunks and others like it chunky. I feel like this salsa is much better with less chunks.
Once your salsa is ready, let it chill in the fridge! It’s always better chilled. When you’re ready to make sandwiches, preheat your oven to 400. As soon as your oven is preheated, toss your warm n’serve rolls on a tray and into the oven. Bake for 8 minutes.
Assemble your sandwiches! I love to spread cream cheese on as a base so the turkey sticks to it and doesn’t fall out of my sandwich!
Top with cranberry salsa…
It’s so bright and festive, but more importantly, it’s absolutely delicious. Check out the recipe below!!
- 12 oz bag Fresh Cranberries, washed
- 2 Jalapenos, minced
- ½ cup chopped Green Onions
- ¼ cup chopped Cilantro
- Juice of 1 Lime
- ¼ tsp Kosher Salt
- ¼ - ½ cup Honey (adjust by taste)
- Cream Cheese
- Turkey
- 8 Rhodes Bake-N-Serv French Rolls
- Throw the first 5 ingredients into a food processor and blend until the desired consistency. Smooth is generally better for this recipe.
- Stir in salt and honey to taste.
- Bake rolls, let cool and assemble sandwiches by spreading cream cheese on the bottom. Add turkey and top with cranberry salsa!
