I am super excited to share this recipe with you! It is fresh, fun and absolutely delicious.
Normally I think of Bruschetta as a special occasion appetizer, but it is actually super healthy and can be great as a quick snack or pick me up!
Just make an extra big batch of your Bruschetta and you can save it in the fridge. Then all you have to do is toast your bread and toss your bruschetta mixture on top.
Don’t toast too many slices because you will not be able to stop!!
The secret to this amazing Bruschetta is the glaze!!! Seriously. I’ve never had Bruschetta with a glaze until this last Valentine’s day when I was looking for unique Bruschetta combinations!
I will never make Bruschetta without the glaze again…
- 4 ripe roma tomatoes
- ½ yellow bell pepper
- 1 Tbsp olive oil
- 1 tsp garlic
- 1 teaspoon fine sea salt
- ½ tsp black pepper
- 1 heaping tsp basil or a small handful of fresh basil chopped
- French bread or your favorite bread sliced
- Balsamic Glaze:
- ½ cup balsamic vinegar
- 2 Tbsp sugar
- 1 tsp fine sea salt
- ½ tsp ground black pepper
- For the Bruschetta mixture dice your tomato and bell pepper! Combine with olive oil and seasoning. Refrigerate until ready to top the bread.
- Prepare the glaze by combining all the ingredients in a saucepan. After about 5 minutes on medium heat it should start to thicken. Remove from heat when it starts to thicken. It will thicken even more once it is removed from the heat. Set aside until ready to serve.
- Slice your bread and brush with a little olive oil and garlic. Toast for just a few minutes (watch it closely) in the oven.
- Top bread with bruschetta mixture and glaze. Serve immediately
