I was looking for something to mix things up a bit and I found this delicious Spicy Jerk Chicken. This recipe is the perfect healthy recipe that still wakes up the taste buds!
The caribbean flavors are so vibrant and we love the spicy kick! I feel like spicy food gives me energy and helps get me going… Which is a great remedy for when I need a little pick-me-up!
This marinade/sauce is delicious. But… I would advise being very careful when cutting and handling your pepper, especially if you wear contacts.
We love having tacos and wraps, so we decided to throw our jerk chicken into quesadillas and paired it with a delicious baked sweet potato and pineapple dish.
But you can also serve this with rice if you want to be a little bit more traditional.
Or make it into a Spicy Jerk Chicken Salad! There are so many options!!
- 2 tsp minced garlic
- 5 green onions
- ½ tsp thyme
- 1 habenero
- 1 tbsp ginger
- 3 tbsp white vinegar
- 1 tbsp water
- 3 tbsp brown sugar
- ½ tsp allspice
- ¼ tsp nutmeg
- 1 tsp salt
- 3 chicken breasts sliced
- Coleslaw:
- ½ red cabbage
- ½ cup mango
- ½ cup pineapple
- 1 red bell pepper
- 3 green onions
- 1 tbsp fresh cilantro
- Dressing:
- 3 tbsp honey
- 3 tbsp lime
- 1 tbsp orange juice
- 3 tbsp plain yogurt
- 1 tsp salt
- 1 tsp dijon mustard
- Combine garlic, green onions, thyme, habanero chile (seeded), ginger, white vinegar, water, brown sugar, allspice, salt and nutmeg into a blender or food processor and pulse into a sauce.
- Grill chicken. Either marinate the protein in jerk seasoning sauce before grilling or brush on top afterwards before serving. Or both! You only need a couple tablepoons to marinate.
- In a medium bowl, slice and chop half a red cabbage, peel and slice mango and pineapple, thinly sliced red pepper and green onion. Mix. Combine dressing ingredients, toss with slaw and refrigerate until ready to serve.
