My husband’s favorite candy bar is a Twix Bar! And I must admit, I do love Twix bars.
All of that ooey, gooey caramel along with a thick layer of creamy chocolate and the finishing touch… peanut butter shortbread! I added the Peanut Butter for a little twist.

And this month, the Peanut Butter Bash couldn’t have come at a better time.
In August, our family drove to Utah, from North Carolina. A 30 hour drive. With 3 kids. Let’s just say it was definitely a trip and not so much a vacation. We absolutely loved seeing both of our families. But the travel time was rough. We had a lot of car sickness, as well as a few other mishaps. Once we got home, the exhaustion hit and I ended up getting the stomach flu for the second time in less than 2 weeks. As I recovered from the flu, I started to get a sore throat and a cough. Not sure what that means, but I’m having a hard time getting my life put back together post trip.
But peanut butter, chocolate and caramel will cure all… am I right??
- Peanut Butter Shortbread
- 3 tbsp peanut butter
- ½ cup butter
- 1¼ cup flour
- ¼ cup sugar
- Caramel Filling
- ½ cup butter
- ½ cup brown sugar
- 2 tablespoons corn syrup
- ½ cup sweetened condensed milk
- Chocolate Topping
- 2 cups chocolate chips
- 1 teaspoon vegetable oil
- Mix together flour, sugar, butter and peanut butter. Mix until it forms little pea sized balls. Press the mixture into a 9x9 pan and back for 20 minutes at 350. Edges should be slightly golden.
- After pulling it out of the oven, let it cool completely... I just threw my shortbread in the fridge.
- In a sauce pan, combine ALL the caramel ingredients in a bowl. This is super important... bring it to a boil and stir consistently. Then stir consistently on the heat for 5 minutes. Remove from heat and continue to stir for a couple minutes.
- Pour caramel over shortbread and stick it in the fridge to cool. Caramel mixture should start to solidify.
- Microwave chocolate with oil for a minute and then stir until it melts completely. Spread over the top of your candy bar!
