Okay… I really should rename these DOUBLE Peanut Butter Oatmeal Bars with a thick, creamy and rich Chocolate Topping. But hey… that title is way too long!
And I didn’t even add that they have Peanut M&M’s crushed and sprinkled on top… YUM!
You guessed right… the #peanutbutterbash is back! And our pairing this month was Peanut Butter and Oatmeal. So I probably should have done something healthy. That way everyone who is trying to be healthy this month would want to eat it all up.
Ha ha… Well, I guess I’m tempting all ya’ll! I just couldn’t resist. This is one tasty treat you want to make. right. now. seriously.
If you need a little help rationalizing this treat… just remember it’s super “healthy” because it has peanut butter and oatmeal in it! Lots of protein and fiber. Just ignore the fact that it also has a good amount of sugar and it fits right into your meal plan for the month!!
In all seriousness, this is a very rich dessert that everyone will love. But it is DEFINITELY DESSERT. It takes about 15 minutes to prepare and then it sets up in the fridge. No baking required.
- ½ cup butter
- ½ cup milk
- ¼ tsp salt
- 2 cups sugar
- 1 cup peanut butter
- 1 tsp vanilla
- 3 cups oatmeal
- 1 and ½ cups semi sweet chocolate chips
- 2 tbsp peanut butter
- optional peanut M&Ms
- Melt the butter in a saucepan on the stove and add the sugar, salt and milk. Bring to a boil and allow to boil for a minute on medium heat.
- Remove from heat and immediately add 1 cup peanut butter and vanilla. Stir until all the peanut butter is melted and the mixture is smooth and creamy.
- Add oatmeal and continue stirring until it is mixed well.
- Grease a 9X13 pan lightly and spread the mixture into the pan until it is even.
- In a microwave safe bowl, place chocolate chips and 2 tbsp peanut butter. Microwave for 30 seconds and stir. Repeat until the mixture is melted and creamy. Spread over the top of the oatmeal mixture until it is perfectly smooth...
- Sprinkle crushed Peanut M&M's over the top. The color of your choice!!
