If you know me at all you know that my favorite side is guacamole! Followed closely by homemade salsa… You also know that I never measure I just throw everything in a blender and hope for the best.
This loaded guacamole is the best of both worlds. I make this when I don’t want to make both guacamole and salsa.
It’s like guacamole on steroids! Loaded guacamole has a little kick from the jalapeños!
I love my guacamole smooth, but loaded guacamole has chunks of tomato, jalapeño, onion… You could even add bell pepper, corn or beans if you wanted!
This is perfect for dipping and great for serving at parties. My favorite dipping chips are the multigrain Tostitos! Mm! My mouth is watering just thinking about the combination!
- 3 avocados
- ¼ cup sour cream
- 2 tsp garlic
- 2 tsp lemon juice
- 1 jalapeno diced
- 1 tomato diced
- ¼ cup corn
- ¼ cup diced onion
- salt and pepper to taste
- Pulse 2 avocados, sour cream, garlic and lemon until smooth.
- Stir in remaining avocado diced and jalapeno, tomato, corn and onion.
- Eat it up with some of your favorite chips!
