As a former teacher and a lover of children’s books, I’m a huge fan of Dr. Seuss. In fact, when I taught 2nd and 3rd grade my classroom was themed after Dr. Seuss’s Oh, The Places You’ll Go! book.
I was really drawn to this book by Dr. Seuss because I love to travel and learn new things… but also because of all the positive messages!
I definitely miss teaching a little bit, but I love being at home and able to teach my kids! I’m still looking forward to doing something special for Dr. Seuss’s birthday this year!
I’m planning on a fun breakfast and story time at home!
In order to get enough iron into my kid’s systems, I’ll sometimes add a little spinach to our eggs (or smoothies). A little while ago, I had the idea to blend it all up so that it’s hidden and Owen won’t pick it out.
Green eggs have become super popular around here and our new favorite way to eat them is this Green Eggs and Ham Omelet Roll!
I think this year, I’ll introduce my kiddos to Green Eggs and Ham another great story by Dr. Seuss!
And of course, I’ll share my recipe for Green Eggs and Ham with you, too…
- 5 eggs
- 1 tsp salt
- 1 tsp parsley
- dash of pepper
- dash of paprika
- 1 cup spinach
- ½ cup grated cheddar cheese
- 8-12 slices of ham
- In a blender, add your eggs, salt, parsley, pepper and paprika. Add the spinach too! Blend it until well combined and there are no large leafy green chunks.
- Heat a small non-stick frying pan to about medium heat. Butter the pan lightly right before adding the egg mixture.
- Pour ¼ cup of the egg mixture into the frying pan (or enough to coat the bottom of the pan).
- Let sit for a minute and then use a spatula to go around the edges and separate them from the pan.
- When the egg is all settled, use your spatula to flip the omelet. Immediately sprinkle a little cheese on so that it will start to melt.
- Add a layer of ham slices (2-3 per omelet) and a little more cheese. Then roll it up!
- Place on a plate and sprinkle with cheese and if desired a little more paprika.

how fun is this!!! I will have to try this, I think my boys would love it. I’ve been serving them green eggs for years, but I don’t blend it so even… you can still see the bits of spinach.. I like this all smooth. thanks for the great idea!

I love blending it pretty smooth. It also gets fluffy if you blend it longer… if that makes sense! Super fun and yummy!
