Are you looking for a new delicious pasta dish to try that your whole family will love?? This Chicken Pesto Pasta surprised us and we are hooked!
So we had a little pesto chicken leftover after making these crazy good Chicken Pesto Wraps and I thought I would make something a little more up the kid’s alley! So I added some pasta to a pot of hot water and cooked the noodles then threw a little bit of this and that in.
I took a bite and was astonished. It was the best pasta dish I had made in quite some time… mostly because I haven’t made much pasta recently. Ha ha!
Okay, I guess the surprise came from just expecting a mediocre dish and getting something so yummy I couldn’t help but eat more… and more… and more! I might have had to make a little bit more so that I could share some with the kids.
Oops!
- 8 oz veggie rotini
- 1 cup milk
- ¼ cup butter
- 1 tsp minced garlic
- dash of salt
- ½ cup cherry tomatoes sliced
- ½ cup diced yellow bell pepper
- 1 cup grilled pesto chicken
- 1 cup cheddar cheese and parmesan cheese
- Prep your chicken in advance by tossing chicken with a tablespoon of pesto, a teaspoon of garlic and a dash of salt and pepper. Then grill!
- Cook your pasta and drain. Melt butter and add milk, garlic and a dash of salt.
- Next add all your veggies, chicken and cheese. Mix until melted!
- Sprinkle with parmesan cheese and garnish with basil!

Yes!! All I do is add about a tablespoon or two of pesto and a little garlic and salt to my chicken before grilling it! Super easy! I’ll add that note in this post, too. Thanks Jennifer!
