Lately Owen has been going through this phase {please let it be a phase} where every unfamiliar meal is a fight. Out of all my kids, he tends to have the biggest stubborn streak. So since we started enforcing the rule that you can’t get off your chair until you eat your dinner, he just sits there and stares at us and his delicious food moodily. I love my kids, but come on! That’s just annoying.
The funny thing is that when he finally decided to take a bite, he ended up gobbling up the whole dang sandwich in less than a minute and then asked for seconds. Which led to the ever more frequent question – Why did you wait so long to take a bite?????
I don’t know why the kids think I would ever make something less than delicious. Seriously!
CHEESEBURGER CASSEROLE
This meal is super easy – it just requires a little planning since you do need to pull out the Rhodes rolls to thaw and bake according to package instructions earlier in the day.
While the rolls are cooling, prep your burger meat. We’ve always been a ground turkey loving family, but hamburger is great, too! We added a few of our favorite veggies and spices to our meat mixture.
Once the rolls are cooled, cut in half and line the bottom halves up in a baking dish.
Layer the meat mixture on top.
Add a layer of cheese. Top it off with the leftover roll halves and you’re almost there…
This last step is the secret weapon that takes this Cheeseburger Casserole to the next level. Mix the glaze ingredients in a saucepan over low heat until the ingredients are combined. Pour glaze over the rolls evenly.
Bake for 20-25 minutes until heated through and cheese melted!
The glaze makes for delicious crispy rolls that add the perfect amount of sweet crunch to your cheeseburger casserole!
I filled my baking dish with 15 rolls and our family of 6 devoured them… there were only two left! And that’s because we paired it with a giant green salad and we have a rule that you always eat your salad first. If we hadn’t added the salad, I’m sure there would have been a fight for the last two rolls!
- 15 Rhodes Dinner Rolls
- 12 slices Cheese
- ¾ pound Ground Turkey
- ¼ pound Italian Sausage
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Garlic
- 1 tsp Onion Powder
- 2 tbsp Tomato Paste
- 1 small Onion, diced
- 1 Bell Pepper, diced
- 1-2 Jalapeno, diced
- Glaze
- ½ cup Butter
- 2 tbsp Brown Sugar
- 1 tbsp Worcestershire sauce
- 1 tbsp mustard
- At least 2-4 hours before dinner, pull rolls out to thaw and bake according to package instructions.
