I love oatmeal. For breakfast, snacks and dessert. I love oatmeal in cookies, granola and yogurt!
I literally have to watch my oatmeal intake because I could easily have something oatmeal all day. During our health challenge I specifically need to make sure that I don’t overeat any one specific food–even good food, if not eaten in moderation can be unhealthy.
I think this oatmeal cookie bar is probably one of the best sugar free desserts that I’ve ever had! It is addicting. Mmm.
I love the subtle coconut flavor and the nuttiness of it!
ALMOND OATMEAL COOKIE BAR

Almond Oatmeal Cookie Bars are a delicious, sugar free and healthy way to curb your sugar cravings!
Serves: 14
Ingredients
- 2 cups nuts (I used a combination of pecans, almonds and walnuts)
- 1 cup oatmeal
- 1 cup oat flour (blended oatmeal)
- ¼ cup ground flax
- 2 tablespoons chia seeds
- ½ cup coconut flakes
- ¼ cup honey
- ¼ cup coconut oil
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- 2 tablespoons almond butter
- ½ cup chocolate chips
Instructions
- Combine all the dry ingredients and mix them up well.
- In a saucepan, heat the honey, coconut oil, vanilla, almond butter, cinnamon. Mix well and bring to a boil. Let it bubble for a minute and then pour over the dry ingredients.
- Mix until everything is coated and then toss the chocolate chips in. They should get all melted and should stir in really well!
- Press hard into a 9x13 pan. I laid aluminum foil in the bottom of my pan and sprayed it so that I could pull it out and cut the bars).
- Bake for 10-15 minutes @ 350.
