I love strawberry season and I hate that it goes so quickly! This is the second summer in a row that we’ve been strawberry picking and it was so fun.
However, the last batch of strawberries we picked was super ripe and going bad quickly…
So I was desperate to use the berries before they were no longer crisp and delicious.
As I was brainstorming what to make for breakfast, it hit me that I should try making some delicious strawberry syrup.
I had never had homemade strawberry syrup before… I’m a traditional peanut butter and maple syrup girl!
But this was something special. My kids even ate a whole waffle each… which is double what they normally eat.
- 3 cups strawberries
- ¾ cup sugar
- 2-3 Tbs lemon juice (we like a little extra lemon)
- 1 tsp vanilla
- Slice up your strawberries and toss them in a saucepan.
- Combine with the rest of your ingredients and simmer on medium-low for 10-15 minutes, stirring occasionally, until sugar is completely dissolved and very syrup-y!
- I whisked mine a little at the end to break up the strawberries even more.
When it comes to waffles the toppings really make all the difference!! MMMmmm.
