STRAWBERRY COVERED CHOCOLATE PIE

The inspiration for this recipe comes from the delicious chocolate covered strawberry. Chocolate covered strawberries are one of my favorite desserts, so when I was trying to come up with a dessert to end our date night of strawberry picking I thought of chocolate… and then created this delicious pie.


This pie has 4 parts. The base is a delicious and flaky pie crust, you can find my favorite pie crust recipe here. Then you will fill the baked pie crust with a decadent chocolate custard. Top it off with my delicious Whipped Cream Cheese and some sliced strawberries.

Let’s get started!

Chocolate Custard

Ingredients
4 Tbsp cocoa
3/4 cups sugar
1/4 tsp salt
1 cup milk
1/2 cup heavy cream
2 egg yolks beaten

1/2 tsp vanilla
1 Tbsp butter

1/2 cup heavy cream
1/2 cup cream cheese
1/2 tsp vanilla
1 cup sugar

Instructions
1. Mix first 6 ingredients with a wire whisk on the stove.
2. Cook while stirring on medium heat until it bubbles and thickens. At least 5-10 minutes. You will want to cook it to your desired consistency because it won’t thicken up anymore.
3. Remove from heat and stir in the vanilla and butter.
4. Pour into your cooked pie crust and let set in the freezer for 3-4 hours.
5. Prepare the whipped cream cheese by whipping in a small food processor or blender until it thickens and starts to form soft peaks.
6. Top with whipped cream cheese and strawberries!

I put the chocolate custard together in about 20 minutes. I started working on it as soon as I put the pie crust in the oven so that I could put them both in the freezer early in the morning. I wanted it to have enough time to set up for our date night in the evening.

The cream cheese topping can be whipped together in about 5 minutes. It’s seriously one of my favorite breakfast toppings. I love it with fruit!!!

Spread the whipped cream cheese topping over the set chocolate custard.

After spreading the whipped cream cheese topping you can top the pie with delicious, fresh picked strawberries!
