CREAMY & TANGY SUMMER SAUSAGE PASTA SALAD

I love, love, love pasta salads. They are the perfect side dish to bring to summer Barbeques. The pasta salads are always my first stop! There are so many words that could describe this salad… so the title just keeps going and going. This pasta salad is full of flavor and a quick and easy fix, you just throw it all together!
The inspiration here is the Summer Sausage. MMMmmm. The amazing thing about pasta salad is that its super easy to add only the things that you like and make substitutions that work for you.

This recipe is very quick and easy to throw together with a little bit of planning. I usually cook the noodles earlier in the day while I’m doing something else in the kitchen and put them in the fridge so that it doesn’t take as long for the salad to chill.

Then I can slice veggies and throw the dressing ingredients into the blender and mix it all together right before dinner in less than 10 minutes.

Scott loved the tanginess of the banana peppers, but he picked out the olives and gave them to Owen! Pasta salad is super easy like that.And this salad is definitely a crowd pleaser.

CREAMY & TANGY SUMMER SAUSAGE PASTA SALAD

Creamy & Tangy Summer Sausage Pasta Salad
Ingredients
  • 16 oz. pasta
  • cherry tomatoes
  • olives
  • summer sausage
  • banana peppers
  • For the dressing:
  • 2 tsp garlic
  • ½ cup rice vinegar
  • 2 Tbsp lemon juice
  • 2 Tbsp red wine vinegar
  • 2 tsp sugar
  • 1 tsp salt
  • ¼ tsp pepper
  • ½ tsp basil and oregano
  • ½ cup olive oil
  • ½ cup mayo
Instructions
  1. Cook the pasta and set aside to cool. I usually do this earlier in the day and put it in the fridge with a little bit of olive oil so it doesn't stick.
  2. Slice the summer sausage and other veggies.
  3. Throw all the dressing ingredients in a blender and whip it up! Combine and stir!

    What is the difference between regular sausage and summer sausage? I’ve never seen summer sausage.. But I guess I haven’t been looking! This looks yummy!!!

      I sent you a picture of Summer Sausage. It’s pretty delicious. We only have it on special occasions… and in salad! 🙂

    What are the quantities for the cherry tomatoes, olives, summer sausage, and banana peppers? I am sure I could eyeball it, but I’d love a “guesstimate”.

      Oh… Sorry! I totally just eyeball it. I usually use about half of a small container of cherry tomatoes, a handful of olives chopped, a couple spoonfuls of banana peppers chopped and as much summer sausage as I’m in the mood for!! Probably about half a cup chopped. Sorry I don’t have exact measurements! But I’m sure it will turn out great. I would suggest chopping more and stirring it in to see how it looks!
