Ginger Molasses Cookies… A warm and delicious cookie that tastes like Christmas! Right now I’m wishing I had some more of these cookies to munch on!
I just watched Willy Wonka and the Chocolate Factory with my kids. Lanae was so hilarious the whole time… “Oh no mom! That kid is being BAD!” I was laughing so hard when she kept putting her hands to her face and shaking in disbelief and nervous excitement. I love having kids!
These Ginger Molasses Cookies remind me of the experience Violet had while eating the chewing gum. You know… when she described actually tasting and feeling the warmth of the tomato soup in her mouth and running down her throat.
That’s exactly how these cookies are! They are warm and delicious. Like they literally taste warm even when they are not fresh out of the oven. I think it has something to do with the combination of warm Winter spices used.
I think the spices in these Ginger Molasses Cookies have the power to evoke Christmas memories! That’s right, cookies with superpowers!
Add a little bit of white chocolate and you have an extra special cookie that gives off the affect that its been dipped in snow.
- 1 cup butter, softened
- 1½ cups granulated sugar
- ½ cup molasses
- 2 eggs
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon salt
- melted white chocolate for dipping
- Beat together butter and sugar on medium speed until light and fluffy. Add in the eggs and molasses until completely combined.
- Mix flour, soda, cinnamon, cloves, ginger and salt. Now add the dry ingredients to your butter and sugar mixture. Mix until combined.
- Roll the dough into balls. Roll each cookie ball in sugar until covered. Place on cookie sheet and bake for 8-10 minutes. You will start to see little cracks on top.
- Remove from oven and let cool then transfer to wire racks. Dip in or spread melted white chocolate over half of the cookie.
It’s officially Christmas time when you make these cookies!
