Lanae had a birthday a couple weeks ago and she requested Taco Salad for her birthday dinner. Does anyone else find that a little odd?
I was super surprised. What child asks for a salad? And then actually eats it?
Believe me, I’m not complaining. I love that she loves salad!
While I was making her taco salad, I had this crazy idea for a salad dressing. I mentioned it to my husband and he kind of gave me that… “You’re crazy!” look and advised me to just do what I know.
I guess he wasn’t in the mood for one of my experiments. I reluctantly gave in and just made the normal guacamole and salsa!
But I just kept thinking about this recipe. So the very next chance I got, I tried it out!
The result? Incredibly flavorful, smooth, creamy and delicious. Probably my favorite dressing ever!
- 1 avocado
- 3 Tbs lime
- 2-3 Tbs vinegar
- 1½ tsp garlic powder
- 1 tsp salt
- ½ cup packed fresh cilantro
- ¼ cup sour cream
- ¼ cup green onion
- ½-3/4 cup water
- Combine all the ingredients, except water, in a blender. If you put more vinegar in, it will be a bit more tangy. Blend until smooth and creamy.
- Add enough water to make it your desired consistency.
- Keep refrigerated. Doesn't keep more than 2-4 days (depending on how much vinegar you put in).

Does the Avocado Cilantro Lime Dressing require 3 T. of lime pulp from a fresh lime or 3 T. lime juice?
