I’ve been missing my cookies lately. Seriously! Sometimes I just need a good cookie.
Now I’m not going to say that these cookies will replace my favorite cookies of all time… The Best Chocolate Chip Cookies Ever!! I have yet to find a cookie that compares to these cookies.
However, these cookies are pretty darn good!
And if you take into consideration the health factor, they are a great alternative for when you are trying to make extra good decisions. Like we are right now…
We are on week 5 of 8 for our health challenge and we are being so good. Both Scott and I have made a lot of progress and are feeling a lot healthier. Of course there is still room for improvement.
These reminded me of the classic oatmeal cookie that you make and dip in a glass of nice cold milk. Mmmm. Mm.
The cool thing about these is that they only take about 5 minutes to throw together and 6 minutes to bake. So if you are having a little sweet tooth you can have them ready in less than 15 minutes.
- 1½ cups roughly chopped oatmeal
- ¼ cup chopped pecans
- ¼ cup sunflower seeds
- ¼ cup coconut flakes
- ¼ cup mini chocolate chips
- 1 Tbsp ground flaxseed (optional)
- ¼ tsp kosher salt
- ½ tsp baking soda
- 2 bananas
- 2 Tbsp honey
- 2 Tbsp coconut oil
- Combine all the dry ingredients to make your cookie base.
- Mash a banana and add honey, coconut oil, baking soda and salt. Mix well.
- Add the banana mixture with the dry ingredients and mix until you have a cookie dough like consistency and everything is mixed well.
- Spray a muffin tin and place about 1 heaping tablespoon of the mixture into muffin tins and push flat.
- Bake for 5-7 minutes. Pull out of the oven and leave them to sit for another 5 minutes before pulling them out of the muffin tin.
- These cookies are best the same day and paired with a glass of milk!

I have found that eating healthy is great when it comes to everyday eating… but when it comes to sweets and reducing sugar, it is definitely an acquired taste. I’m definitely craving some good old cheesecake!
