I am a huge fan of sandwiches. Lately, I’ve been craving sandwiches a lot more than normal. It’s a pregnancy thing.
The only time we really justify eating out is to get a delicious sub sandwich, but eating out for sandwiches is really not the wisest choice financially. You can buy all the ingredients for gourmet sub sandwiches… is that a thing??
They taste better and are better for you that way. Plus, you get way more sandwiches that way. But then you have to go to all the effort to make the sandwich. Which you may not do if you are tired and busy or just lazy. Which if we’re being honest, we all are!
However, if you do go to the effort to make this classic chicken salad sandwich filling and you buy a long loaf of french bread, then you can have delicious sandwiches all week long.
One day of prep equals a week of easy lunches. Definitely worth it!
- 2 chicken breasts grilled and shredded
- ¾ cup mayo or plain yogurt
- 2-3 tsp dijon mustard
- 1 tsp garlic
- 1 Tbsp parsley
- salt and pepper to taste
- ½ cup purple grapes halved
- ¼ cup almond slivers
- green leaf lettuce
- loaf of french bread or other bread
- Mix shredded and grilled chicken with mayo, dijon mustard, garlic, parsley, salt and pepper.
- Add the grapes and almond slices.
- Top your bread with lettuce and chicken salad mixture.
- Enjoy!
