I’ve been in a kind of funk lately. I blame it on the pregnancy hormones, but I’m pretty sure that’s not the real problem. I got sucked into a similar funk last February.
The only thing that helps me feel better lately is chocolate or ice cream. Or chocolate and ice cream.
I think this happens to everyone occasionally… Maybe??
The thing is, chocolate helps for like 15 minutes and then my body crashes–that I blame completely on the pregnancy. So then I need more chocolate. NOT a good cycle.
I decided that I needed something healthier to resolve those sugar cravings. That’s where the Peanut Butter Granola comes in!
Instead of grabbing the ice cream in the evenings, I grab some granola and my favorite greek yogurt.
It’s a bit healthier and doesn’t cause my body to crash. Which really helps. After I made the granola, I told Scott that he had to help me and he banned all ice cream consumption for a whole week! Sounds harsh, but I really needed him to stand up to me so I could get over my ice cream addiction.
In my moments of weakness, he has been great at supporting me and pouring me a bowl of granola instead of ice cream. I’m super grateful that he’s trying to help me be a little healthier.
- 6 cups rolled oats
- 3 cups mixed nuts roughly chopped
- 1 cup coconut
- ¾ cup whole wheat flour
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 1 cup peanut butter
- 1 cup honey
- ¼ cup canola oil
- ¼ almond milk
- 2 tsp vanilla
- Preheat the oven to 325.
- Mix the oats, nuts, coconut, flour, baking powder, salt and cinnamon. Set aside.
- Whisk together the peanut butter, honey, oil, milk and vanilla.
- Pour the liquids over the oats and stir until everything is coated.
- Pour the granola onto 2 big cookie sheets and spread it out evenly. Bake for 10 minutes, stir and return to the oven for another 10-15 minutes. It should be golden.
- Remove and stir one more time and then set it on the counter to cool. Let it cool completely before snacking.
- After it is cooled, place it in an airtight container.
- Serve with your favorite yogurt or milk... or even over ice cream.
