I am sharing an ultimate comfort food recipe today… That is actually pretty healthy for you, too!
This is my mom’s Chicken Pot Pie recipe and it is a good one! We love Chicken Pot Pie around here. Before going into labor with Lanae, I made a huge double batch of Chicken Pot Pie filling and froze it so that Scott would be able to easily put together a delicious homemade dinner in the first couple weeks when we were trying to adjust!
It was such a good dinner that made me feel happy, so I prepped a double batch and froze it again before Owen was born.
Chicken Pot Pie does take a little more time to prepare, so we generally only have it once every couple of months.
The pie pictured here is actually a turkey pot pie (meaning I just substituted Turkey for Chicken). After Christmas there was a discount on leftover turkeys, so we bought one, baked it and have been using it for Turkey sandwiches and other delicious meals like this one!
This recipe is super easy if you buy pre-made pie crust. But it’s only a tiny bit more work if you make your own pie crust. We always make our own!
You can make this recipe in a big pie plate or like I did in 8-10 ramekins. My kids love that they get their own pie!!
- 5 oz. frozen peas
- ¼ cup chopped onion
- 2 Tbs butter
- ⅓ cup flour
- 1 tsp salt
- ½ tsp salt
- ¼ tsp sage
- ¼ cup parsley
- 2 cups water
- 2 potatoes diced
- 4 carrots diced
- ¾ cup milk
- 1 Tbs. chicken bouillon
- 3 cups cubed chicken or turkey
- Pastry for double-crust pie
- Cook potatoes, carrots and peas. Drain.
- In a sauce pan, cook onion in butter till tender. Stir in flour, salt, sage, and pepper. Add water, milk and chicken bouillon all at once. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 mins more.
- Stir in drained vegetables, chicken, and parsley; heat till bubbly.
- Turn chicken mixture into a pie shell lined with pastry, cover with top pastry, and make slits.
- Bake @ 450 for 10 to 12 mins. or until crust is golden brown.
