It’s time for the #peanutbutterbash again!! Remember this delicious Chocolate and Peanut Butter Protein Shake? Well, today I am back with another Peanut Butter + Mystery ingredient recipe. This month’s mystery ingredient is Pumpkin!
I wish I was in a place where I could make a sweet peanut butter and pumpkin dessert. But I am definitely not motivated to make something I can’t eat right now…
So I settled for a delicious and only slightly sweet Pumpkin Waffle! The great thing is it is actually a super healthy breakfast that will satisfy your taste buds!
For these waffles, I added a combination of oat flour and white flour to make them a little healthier.
These pumpkins turned out so crispy on the outside and moist on the inside, they were perfect!
Top it off with a Peanut Butter Maple Syrup… amazing. It’s a thick peanut buttery, maple syrup that’s not too sweet.
- 2 cups flour
- 2 Tbs baking powder
- 1 Tbs cinnamon
- 1 Tbs sugar
- ½ tsp nutmeg
- ¼ tsp pumpkin pie spice
- ¼ tsp salt
- 4 beaten egg yolks
- 4 egg whites
- 2 cups milk
- 1 cup pumpkin
- ¾ cup melted butter
- 1 Tbs vanilla
- For the syrup
- 1½ cup water
- 1 cup brown sugar
- ½ cup peanut butter
- 1 tsp maple extract
- Mix the dry ingredients together--flour, baking powder, cinnamon, sugar, nutmeg, pumpkin pie spice and salt.
- In a separate bowl mix the beaten egg yolks, pumpkin, milk, melted butter and vanilla.
- Combine wet and dry ingredients, mix until just combined.
- Take the egg whites and beat with a mixer until they form peaks. Fold the egg whites into batter with a spatula.
- Pour into waffle iron and cook!
- For the syrup, combine water, brown sugar, peanut butter in a sauce pan. Mix until there are no peanut butter chunks and it is smooth.
- Bring to a boil and let boil for 5-6 minutes.
- Remove from heat and add maple extract. Pour into a serving container after it cools for a minute.

My husband is from the East Coast and maple syrup is the thing for him on waffles (and pancakes). I have not tried making the syrup from the extract before so it would be fun to try! Thanks for sharing. Waffles – yum!
